I'd go with necro or monk.
Necro has alot more synergy skills (hexes), monk has healing (handy at lowlevels sometimes) and hard res.

Really it depends what you want to do.
Do you have a particular thing you want to be good at? Do you just want to PVE or PVP as well?
Because if you don't care at all about PVP and you just want to move along PVE at a decent rate Monk probably is your best option. You can heal and res, and thats all you need to do.

Also depends on what you like as well
You may decide Rangers are what you want... so you can interupt... or Necro so you can be good at Hex.
This game as a ton of options. So try out all of them. At first, I never thought Mesmer would be my thing... now, I dont understand how I was anything but.... Its not that I dislike the other classes but when I am them I complain as to "Where is my X mesmer skill"? Then I always go back to being a Mesmer Currently I dont even really use a secondary. I have one selected but my entire bar is just Mesmer skills. that may change but I play PVP and rarely PVE so its an easy switch for me.
Also remember you can change your secondary later in the game. So it wont be set in stone.

Ah, the caster forums are much more homely than the other forums
Well, it depends on what you like to play as. What have you played before in other games, for example?

I mostly use Rez, Rebirth than other monks skills. I can say you rez really fast when the time is needed and let the monks doing the heal and prot instead of Rez in the middle of a battle.

I switch betwen Me/W when I want to do Illusionary Weaponry, and Me/Mo when I want to 55 in UW. Other than these times (so 90% of the time), I just stick to pretty much all mesmer skills. Between all the options you have in the mesmer lines for damage, energy steal/management, and hexes, there's more than enough to make a pretty well balance skill bar for PvE.

Yes, seeing you should be quite familiar with the Monk skills. Although I find Smiting to be more useful to the Mesmer profession than Healing/Protection, unless you're 55-ing.

I think I did Me/E for PvE and just fastcast Fire. It's an easier way to get through the PvE section w/o having to wait 100 years to get into a group or beg guildies to help you out. Plus Fire, esp. now, is pretty effective at lvl 12, so... But yes, my fav is Me/N or N/Me... By the way Heal Sig and Distortion is nice for PvP, so sometimes I just go Me/W... don't know how it works in PvE. I don't remember using much Illusion PvE. Anyways, my 2c is Me/E and fast cast Fire for some quick mass kill damage.

I started off as a Me/Mo. After ascension and all that, I'm still a Me/Mo. The only monk skill I use is Rebirth unless I'm going 55Hp solo, so didn't need to change profession from monk. I find the mesmer line has so much great skills available and I don't need anything else from a second profession. I don't have a particular build when I play my mesmer, I tend to switch skills quite often - taking the ones I feel would be very useful. Sometimes I go Domination heavy or Illusion heavy, rarely do I use both at the same time.

For a student of mesmer which starts in Old Ascalon I would suggest a secondary profession for healing or protection:
monk for healing and res
ranger for Troll Unguent
elementalist for Armor of Earth

I ran through Ascension as a Me/R. Not much synergery in the skills between the two professions (other than interrupts) but I did find Ranger was a nice secondary at the lower levels due to being able to use bows and having a Pet to act as a meatshield. It allowed me to do alot of quests/missions with henchies only.
The problem was post Ascension, after I joined a guild, I was running missions/quests with real people and hardly used my Ranger skills. Now I run mostly as Me/M, as noted above Rebirth with a Mesmer is very nice in groups.
There maybe some synergeries between Mesmer and Elementalist too, although I haven't played with it too much. Being able to Fast Cast damaging attack spells could be very beneficial.
Keep in mind, Mesmers primary attribute is Fast Casting, which works nicely with Monk and Elementalist spells. Many Necro spells already have lower casting times, so it's not as noticable of an effective. Since Fast Casting effects spells and not all skills, Rangers and Warriors see the least benefit from it.
